Slice several jalepeños in half lengthwise and clean out the guts. Fill each with approximately a tablespoon (depends on size of pepper) of cream cheese, or a cream cheese and shredded cheddar mix. If you're looking for extra-spicy poppers, mix the seeds into the cream cheese. (Avoid mixing in the rest of the pepper guts; they can get really bitter sometimes during roasting.) Wrap with a slice of pancetta (also delicious with bacon, but I prefer how the pancetta sort of melts to the pepper). Roast in toaster oven at ~350F for ten minutes or until pancetta starts getting crispy on top. Let cool a couple of minutes and pig out.

Sounds excellent. What's random about that?
It's pretty delicious, especially with quality sourdough. I keep in my random category because it was first grilled out from a drunk night and those being the remaining items in the fridge back in college.
