Just finished eating my homemade wings, and as always....excellent.
The trick is cooking the wings at 400 degrees on a wired rack and flipping the wings half way thru to achieve the crispy skin all around then toss them in whatever sauce you want.

Not for New Years. It was like the 30th. I was just up there for a few days and didn't feel a need to specify a date.
I will use this technique next time. I went with the 10 minutes of steaming, then refrigerating for an hour, then cooking on greased foil. They turned out good, but some were a little tough to flip the 2nd time.
Dude, the discussion was about people complaining about having to pay $0.50 for extra ranch dressing. Not exactly the crowd that gets utility from a 5 star restaurant.
Since you will use that, make sure you season the wings and let it marinate for about a hour or 2. Liquid smoke and /or a seasoning run to add flavor. Only bad thing about this technique is you have to keep an eye on it at all times to prevent overcooking.
Apologies. After conferring with the GF, the other couple picked up the appetizer and two of those beers we ordered and paid for ahead of time while waiting for a table. So that is four beers and two orders of wings for $33. Ok, I guess it is kind of a ripoff.

400 is a little hot. Low and slow is the way to go, otherwise you risk overcooking. I wouldn't go over 350 with them.
I like to do a rub of paprika, salt and pepper, and then marinate my wings overnight. I use a mix of garlic, butter, lemon juice, hot sauce, dijon, and bourbon. Makes for some bangin wings, even in the oven. Of course, using the grill is always better.
If you want to crisp the skin you can put them in the broiler rack for a couple minutes.
At 350 then a broil, you more then likely will dry out the chicken a bit. At 400, from the strt with fresh wings, you don't have to worry about drying out the wings in order to crisp the skin as it is all being done in the same process. Like I said, the key is using a wired rack instead of sheet or pan in order to get even cooking all around. For me, it works out better.

I only go on boneless Thursdays, and even then they are 50cents. That's why Bdubs is the only place I get boneless, you can get bone in wings for 5ents a wing at a million places.

Boneless "wings" are chicken nuggets. It's like giving somebody pulled pork and calling it boneless "ribs". It makes no sense. Breast meat tastes nothing like wing meat. The worst part is the disgusting breading that the meat is coated with.

This is mechanically separated chicken. Chickens are turned into this goop so we can create delicious chicken nuggets and juicy chicken patties. It's obscenely gross and borderline alien but it's not going to stop me from eating nuggets. They're too good.
The process works a little something like this:
There's more: because it's crawling with bacteria, it will be washed with ammonia, soaked in it, actually. Then, because it tastes gross, it will be reflavored artificially. Then, because it is weirdly pink, it will be dyed with artificial color.
