Some friends took me to Blondie's Barn on Marsh Road, right by Haslett Rd, last time I was in town. That place was pretty good, and there wasn't too bad of a wait.
The Soup Spoon on Michigan Ave in Lansing is probably the best place in town.

Soup Spoon Cafe is probably the best breakfast spot. On Michigan near Sparrow Hospital so it doesn't really qualify as East Lansing, though. And they stop serving breakfast at 11.
Soup Spoon's not open on Sunday...
Edit: Fork in the Road. Breakfast on Sunday 10 - 2 pricey but good. google it.
