Cook some rigatoni. Buy a couple of chicken breasts and slice them up and saute them in olive oil with garlic, basil and mushrooms. Drain the rigatoni and add to cooked chicken etc. Add an abundant amount of grated parmesan cheese and drip olive oil over, mix and serve.

Tacos are always super easy and delicious. Even if you suck at cooking you should be able to pull it off. Get some spanish rice as a side and guac as an appetizer. Best served with margaritas. Perfect for a warm summer night. If you want to make it a little fancier make fish tacos. Cook fish I normally use fresh caught fish but tillapia or any light fish will work. I cook it at 400 for about 12 minutes put some olive oil, garlic, lime juice and old bay seasoning on it. When it gets to be flaky you know its done. Toast the tortillas with a little pepper jack cheese, add cilantro, red peppers avacado and onions. For a tarter sauce I dice up some jalapenos, some siracha hot sauce, and some lawreys added to mayo. Taste great every time.

Serious answer...make it about the experience and not the meal. Cook something that you can cook in your sleep so you keep your confidence up. Dominate the kitchen...then use the in between time to be playful and flirtatious. Escalate the conversation with sexual innuendo and escalate the physical touching as well. She will wet her panties and chances are you don't even serve dinner after it's cooked...rather, it's an after sex meal.

I was going to suggest the same thing -- baking fish in foil pouches is super simple and really hard to f up.
Preheat oven to 375-400. Get a good cut of salmon, drizzle with olive oil, salt, pepper. Throw some capers in too. Close up the foil pouch and bake for 10-11 minutes.
Cook some rice to go with it. If you want to get fancy, make a rice pilaf, but if you're worried about over-complicating things, then just make regular rice. (Couscous is also good.)
Make an arugula salad to go with it. (Again, if you want to do some more work, make asparagus or Brussels sprouts or something like that, but I'm talking dead-simple stuff here.)
Start with proseco and caprese salad or simple charcuterie. You could add an in between course that's not too heavy or not. Depends on her girth. For the main event feed her florentine steak or tagliata di manzo on a bed of arugula and parmesan shavings over the top with roasted rosemary potatoes. Pair with a sturdy red. The potatoes are simple to prepare and take about 40 min and the steak is quick and easy. That will give you time to kabitz without burning anything. Buy fresh herbs and buy meat from a good butcher or meat case at least. Get some fresh mozzarella for caprese salad not stuff that's been at the piggly wiggly for three months.
Any entree suggested could be good. If you want 'romantic' post game personally I'd go with something lighter. Tapas style, a few small plates in case she doesn't like what you made.... And have wine if she likes that throughout. A few candles lit and you're golden.
Try a simple bruschetta, hard to mess up, short prep time but impressive....
And add cheese cubes/crackers, tomato slices with mozzarella and basil, olives, hummus, etc. If you need a protein you could do simple chicken tapas with veggies in a small portion too. Anything you do is a good gesture and if she doesn't like it then you won't want to be with her long term anyhow. Good luck!

This is hard to answer without knowing food preferences, but I always suggest making something that uses produce that is at its peak.
Right now that probably means strawberries. I'd make either fudge brownies with strawberry sauce for dessert or strawberry daiquiries. Salad greens also are really good right now. Salad isn't impressive, but I'm not sure that's what this meal is about.
Slow cooker beer carnitas also are an easy dish that generates delicious leftovers for her lunch the rest of the week.
Ceviche is also delicious and very hard to fuck up.

Just make one of those bacon logs
6 oz filet, pan fried with a wine Demi glaze sauce. Pan fried zucchini with a touch of parmigiana. Cabernet wine to drink and for the Demi glaze. Or a dry Pinot noir if she is not into dry wine. Very easy but appears impressive. Cook together or if you cook it only cut open your steak to check if its done (assume your cannot tell otherwise). Seriously this will take you five minutes online to learn and ten to cook. Skip the bacon in the steak.
Low car high quality meal. Not too much and every lives a filet. Especially with a cab.

Easy, quick, fantastic and nearly impossible to botch
Buy a jar of Cajun Seasoning/Spices
Get 2 pieces of fresh Salmon about 1 Lb total
Coat the fleshy side with Seasoning
Broil skin side up for 2 minutes, turn and broil flesh side up for about 4-5 minutes until flaky
Serve with a tossed lettuce/tomato salad and Uncle Ben's Long Grain and Wild Rice.
Either the 5 minute or 20 minute works, the 20 minute is better but with the 5 minute you can make this whole meal in about that time. Amaze her
Roll her a fatty to toke while you cook
Chicken takes too long and as someone noted difficult to get it moist and tasty unless you know what you're doing and she'll be wasted by the time it's done. A light buzz is perfect
Serve with Red Wine
