Coming from a former "Salad Bar Attendant"...
...Ranch dressing at restaurants comes in relatively large quantities and gets used pretty damn fast. Gives them more freedom with what to put in it since it won't have as much of a chance to spoil. The stuff you buy in the grocery store might take a good 2 weeks before someone buys it, then is expected to sit in the fridge for another month. They sacrifice taste for shelf life.
