My guess is that is has to do with fermentation time - the hotter the ferment, the quicker it ferments out. It is a trade-off between flavor and time. For us homebrewers, a few extra days in a carboy isn't a big deal - but a few days in a fermentation tank at a brewery is a big deal. That's just my experience, especially with American and British Ale yeasts - a cooler ferment temp really has a positive aspect on the finished beer.

I'll be brewing my first batch next weekend. It'll be a Belgium Wit Beer (Oberon clone from what I gather) that I received as a Christmas gift. Seems like a pretty foolproof recipe, malt, hops, wit spice are all pre-measured as long as I can keep sanitation and temperatures in check I like to think I'll be in good shape.
Any words of wisdom from tRCMB brewing elite?

Had a flight last night that included Stone IPA, Lagunitas Brown Shugga and Dragon's Milk. There was one other beer too, but I can't remember what it was now, which is probably a result of the Brown Shugga...Good stuff though.
