They could always give them the Tron Legacy treatment and CGI their faces to be younger.
As for directors, you need people who are good at mastering visual style and emotional connections, as well as someone that would respect the source material.
I think Whedon, Abrams, or Nolan would all be good candidates.

Lucas said a long, long time ago in a far off galaxy that Episodes 7 would occur when the characters were in their early 60's. Mark Hamill is 61--but looks turrible. Lucas did meet with Hamill and Fisher this past summer and talked about making more films. If they are good at makeup and take the raspy, smokiness out of Fisher's voice they might have something.

And in a piece of news that suddenly has me interested in this, Lawrence Kasdan (writer of Empire) has signed on to write the second film in the planned trilogy. Writer of X-Men: First Class and its sequel will do the third film.
Disney is actually serious about these movies. In two weeks they've put in more effort than Lucas did with the prequels.
Now with a PhD in Applied Llama Physics...

Disney to buy Lucasfilm for $4.05 bil, SW Episode VII in 2015
