Many other greats have been mentioned, including HBO's Deadwood, which I probably wouldn't have initially thought of in a "western" thread.
I'll add "Lonesome Dove" to the list. Great mini-series, brilliant cast.

I don't think anyone has mentioned Butch Cassidy and the Sundance Kid yet. It's more of a buddy movie than a traditional western, but it did have one thing none of those Clint Eastwood westerns had: Strother Martin.

What do you guys think of John Ford films? Stagecoach and The Searchers are classics. I'm not a big John Wayne fan, but he has some good roles in Ford's movies.

These 3 films are the best. You, sir, have multiple +1's from me...if it were possible.

Without getting into the Sergio Leone stuff, because they've been mentioned.
As far as the old ones go, Rio Bravo and High Noon.
Over the last few months I got interested in watching some of the old western miniseries. I'd never seen Lonesome Dove before and was surprised that I liked it. Broken Trail was good, too, thanks to Robert Duvall. Speaking of the Duvall, he was great in Open Range.

I read that book but didn't know it was made into a movie. I'll check it out. BTW, the book is great.

Other than the setting, Inglourious Basterds was Tarantino's western. I think if he ever set a movie in the old west, he'd probably add ninjas on motorcycles.

I'm also a fan of a film that came out a couple years ago called The Proposition with Guy Pierce and Ray Winstone. It's violent Western much like The Wild Bunch and the Leone films.

Nice to see The Proposition get some props. I think it's the best movie, period, made in the last ten years. Brilliant writing, directing and acting. The soundtrack by Nick Cave (also wrote the screenplay) & Warren Ellis (of the Dirty Three) is great as well.

Outside of The Wire, Deadwood is my favorite TV show, ever.
Robert Altman's McCabe and Mrs. Miller is a great western as well.

Great movie and a nice shout out to Strother Martin...one of the greatest character actors in movie history....best remembered for his prison warden in Cool Hand Luke. A guilty pleasure western of mine to add to this thread here features Martin prominently...Hannie Caulder (1971), starring Raquel Welch (looking as sexy as ever), Robert Culp, Ernest Borgnine, Jack Elam, and Christopher Lee. Good storyline, action, and well placed humor. Those of you oldsters like me may remember it. Not a classic by any means but an interesting and worthwhile flick if you've never seen it.
