Any thought on the kind of beer you are leaning toward? I am a big fan of the St. Paul Porter (actually have a batch of that in the fermenter right now). I am also fermenting their Alt beer right now, but you will likely have made your purchase before I get to try that one.

I like it! I'll give it a go.

I have 3 different cider blends going... About 4 days until bottling.

And how is the IPA?

Came out good. I think I'm going to have another.

Just got to taste the pumpkin beer out of the bottle this past weekend. VERY nice. A quick tasting before bottling had be concerned that some of the spices may be too strong, but everything mellowed out. It was a big hit at the tailgate. I think I would even consider using one more pumpkin (another 2-3 lbs) to the two I used this time.

No, but am planning to do 2-4 batches around Thanksgiving. I had a gift certificate at NB so went with their #8 kit. Also making a barleywine for sure. Not sure what else to make - probably between a classic porter, IPA, 2IPA, or may make a Wee Heavy (never made one before).

I've been brewing like mad lately just have not been posting. Just started in March so I'm pretty new to the game. Brewing 5 gallon brews (extract only at this point). Want to go all-grain but want to get to the point where I'm making decent extract brew first (process, procedure, sanitation etc.).

In my basement is 5 gallons of Irish Red, Porter, (2) Ambers - one more hopped/one more maltier, and a stout.

Stuff's been pretty good - IPA won an honorable mention at the Oakland County Homebrew contest at the Renessance Festival.

TWO QUESTIONS -
1.) I'm getting some belgiany flavors in my ambers that I'm using California Ale yeast (White Labs). Almost taste like we used belgian yeast. Our carboys are sitting in my friends living room and I'm wondering if it was too warm? Ideas?

2.) We made a creme brulee stout with lactose and using the same amount of bottling sugar we always use this batch came out of the bottles with zero carbonation? Our other beers have been a tad over carbinated.

Any help is appreciated.

Always. You may have just created a great sour or something with some funk. ya never know.

oh...and post a picture of it. I might be able to tell you what it is.

Looks like Brett. I am pretty sure lacto looks more like snow flakes on top of the beer.
